I can tell you that since hosting a giveaway for their cheese papers early last year, I have not wrapped a single block of cheese in anything BUT their papers since!

I love cheese so much, that I often have multiple blocks....let's say 4-5 different types minimum in my fridge at any given time (so sue me). I used to not be able to finish each cheese, before they started having a little green mold on the surface that I'd have to cut off, or some slime beginning to form. 

Since using Formaticum's cheese papers, I can't remember the last time I saw mold (the bad kind) on my cheese

  1. I was not aware that cheese needed to breathe. I thought if you wanted to keep cheese better longer, you were supposed to remove all the air and plastic wrap cling was a good thing.

    1. You'd think so...right! Yeah, I used to too, but after using these cheese papers I found I was totally wrong. My Saran wrapped cheese declined so much faster than my cheese paper wrapped cheese!

  2. I don't have a favorite type of cheese, although my digestive system sure does. Being lactose intolerant and loving cheeses of all kinds means that I have to be very careful of the types that I eat. I have found that for best results, I must stick to the very hard cheeses. The softer they are, the more my system rebels.

  6. Store each type of cheese separately. (wish I could get the man to believe this, I'm tired of my gruyere smelling like cheddar)

  31. That storing cheese in non-porous materials (I suppose my zip lock bags count!) can cause the cheese to smell and taste like ammonia. Who knew?!

  34. There is not one particular "right" way to fold or wrap your cheese with the cheese paper! Which is good, since I will probably be bad at it.

  52. My favorite type of cheese is Brie, and I learned that the paper lets the cheese breathe and controls the humidity preventing it from drying out.

  67. Cutting soft cheese while is cold will be cleaner and will make it easier to move the cheese to the serving dish. Harder cheeses such as Parmigiano-Reggiano or aged Gouda are much easier to cut at room temperature. For hard cheese, a sharp cheese knife with an offset handle is the professional utensil of choice. For soft cheese a cheese harp, wire or Roquefort bow will ensure clean cuts without deforming shape. Always use clean tools to prevent the introduction of new molds or bacteria.

  71. Keeps your cheese longer. I gought 6 packages today alone. Trader Joes has tons of different types and I hate to have it turn moldy. Cheese is great for our low carb meals.
