Red Gold Saves Game Day - Fresh Black Bean Corn Salsa & GIVEAWAY

Game Day was upon us and with two kids underfoot, I needed a quick and easy recipe for appetizers.

Red Gold, a family owned company since 1942, whose mission is to "produce the freshest, best-tasting tomato products in the world” had just sent me some of their products to try out, so I figured I'd give them a whirl.



Getting all my ingredients in order.....


Taking a look in my pantry and fridge, I found some black beans, canned corn, green chiles, cilantro, green onion and Red Gold Diced Tomatoes - Chili Ready with Onions.

I'm thinking, some kind of black bean and corn salsa?  Easy as pie...or salsa (ahem).

I found a recipe on the back of the 100% Natural, Red Gold Diced Tomatoes for a similar sort of salsa / dip.  For the life of me, I can't find the recipe online and I threw away (wait, let me toot my own horn...recycled) the can so I don't have the exact recipe - but will try to give you the basics.  

Red Gold Fresh Black Bean Corn Salsa 

Ingredients:
  • 1 can (14.5oz) Red Gold Diced Tomatoes - Chili Ready w/ Onions
  • 1 can corn (drained)
  • 1 can (15oz) black beans (drained and rinsed)
  • 1 can green chiles (4.5oz)
  • 4 green onions, chopped
  • 1/2 c. cilantro, chopped
  • salt & pepper to taste
Instructions
  • MIX IT UP!

No, but seriously, it was that easy. Taste it after mixing all the ingredients together because I can't remember if I added a Tbsp. of red wine vinegar. I think I might have. Oops. 

If any of you can find the recipe on the back of the can, send it my way so I can put up accurate ingredients.


Once you taste it, you just can't stop eating it!

I had a friend visiting from out of town when I made this dip / salsa and she snacked on the leftovers for days.  I even made my daughter a quesadilla with the bean salsa inside the next day and she loved it!  

There's nothing I love better than a quick and easy recipe, that packs a punch of flavor and keeps you coming back for more!

  39. My favorite way for fresh tomatoes is chopped up on my salad or mixed with cucumber and doused with apple cider vinegar.
    Canned diced tomatoes are great for salsa, chili, any soup or stew...mmm
