Fresh Express 30-Day Salad Swap Party & Review!

I just joined the 30-Day Salad Swap!


When's the last time you ate a salad that actually filled you up and made you feel like you indulged in whole delicious meal?
 

Fresh Express just rolled out this great idea, called the 30-day Salad Swap, where you trade in your favorite high calorie meals, for a salad with the same flavors, but less calories and better for you!




Match The Flavors - Drop The Calories

  • Your favorite Creamy Pasta becomes Fresh Express Salad w/ Creamy Pasta!
  • Blueberry Pancakes are traded in for a Red, White & Blue Salad
  • Tortilla Soup becomes a delicious Chicken Tortilla Salad
  • Chimichangas transform into Chicken Salad with Tomatillo Salsa

After hearing about the Fresh Express 30-Day Salad Swap, I browsed around the saladswap.com website and found some tasty looking recipes!

So, I figured I'd throw little lunch party with a handful of the moms from my local Meetup.com playgroup to see what they thought of Fresh Express Salads and the recipes I found on the 30-Day Salad Swap website.


Recipe #1. Red, White & Blue Salad




The recipe swap website suggested, instead of indulging in your craving for Blueberry Pancakes, swap them out for this delicious Red, White & Blue Salad, made with 50/50 salad mix and blueberries, strawberries, pears & gorgonzola cheese.

A sweet, but not TOO sweet delicious salad! This one gets a thumbs up from me and a few of the moms in attendance.

Recipe #2. Roasted Butternut Squash Salad


This crunchy and savory, yet sweet salad got quite a few thumbs up from moms in the playgroup. 

This salad is a gorgeous choice for fall or winter, but we enjoyed it thinking about spring being around the corner.

Recipe #3. Italian Antipasto Salad



After spending 6 years on the east coast, I grew to love a good old school Italian Sub.  It's honestly one of my more frequent cravings.

When I stumbled across the Italian Antipasto Salad recipe, using the Italian Fresh Express salad mix I knew I had to try it!

With an Italian Sub coming in at 663 calories vs. this salad at 220 calories, it's a no-brainer, right?!

Recipe #4.  Chicken & Quinoa Salad with Cumin Vinaigrette




























This Chicken & Quinoa Salad with Cumin Vinaigrette, was my personal favorite out of all the salads we made and tried. So fresh, and with the quinoa, it was more filling than many salads out there.

Made with the Fresh Express 50/50 mix, and dressing including fresh lime juice, this salad had a nice zip and tang to it!

At our Fresh Express 30-Day Salad Swap, I had the little ones do an activity where they pasted pictures of healthy and unhealthy foods onto separate boards.  Figured that while the moms were getting a dose of healthy food, that the kids start learning how to eat healthy as well!
