Are You Ready for #GivingTuesday? November 27, 2012

Do you love the holidays? Love shopping? Love the mystery of not knowing what presents await you under the tree?

I'm sure all my McKinney Mommas readers have heard about Black Friday and Cyber Monday. Hey, I love a good deal as much as anybody.  

But, have you heard about #GivingTuesday?



Here's a question::

Do you spend as much time looking into where you can volunteer this holiday, as you do hunting down the best Cyber Monday deals online?

Or, planning a map of how many stores you can shop before noon on Black Friday, as you do figuring how you can balance your budget so you can give to your favorite charitable organization this season. 


#GivingTuesday is not a new thing.

It's a call to action, encouraging everyone in America to partner with their neighbor and show that the holidays are not just for shopping and presents - rather it's about joining hands with our community and supporting each other wherever it's needed.

Thai Green Curry Tofu and Basil, made with Campbell's Skillet Sauces

I have to brag for a minute.  My husband is pretty cool.

Since I got pregnant October of last year, he has stepped in, making most dinners for our family. Yes, he works a full-time job and then comes home and cooks a lovely meal for our family!

I'm spoiled.

I'd like to return the favor once in awhile, but with a 4 month old, and 21 month old it's not easy to get dinner ready by the time he gets home....or sometimes at all!

Campbell's Skillet Sauces are a new product that will help busy moms like me who like to cook, but don't have time for making sauces by scratch, whip up a great dinner in no time flat!




Campbell's Skillet Sauces

  • Creamy Chipotle with Roasted Corn & Black Beans
  • Fire Roasted Tomato with Red Bell Peppers & Chiles
  • Marsala with Mushrooms & Garlic
  • Scampi with White Wine & Garlic  
  • Thai Green Curry with Lemongrass & Basil
  • Toasted Sesame with Garlic & Ginger 
The instructions on the package, are very simple: 

You Will Need:
  • 1 TBSP. Vegetable Oil
  • 1 LB. Skinless, Boneless Chicken Breast, cut into strips
Instructions: 

1. Heat oil in a skillet over medium -high heat
2. Add chicken and cook until browned
3. Stir in sauce and heat to boil. Reduce to low, cover and cook 5 min or until chicken is cooked through

Serve over rice or pasta. Simple as that!

Thai Green Curry Tofu with Basil



Ready to wow your family with this simple dish?



I started out with a package of tofu, cut into 1-inch cubes and cooked in 1 Tbsp. of Peanut Oil in a Medium-High skillet until browned, approximately 10 minutes.

* Tip: When you take the tofu out of the package, wrap in a paper towel for a minute and squeeze lightly, to absorb some of the moisture.


I added one zucchini for color. More importantly, it's a good source of fiber and vitamins C and A. Gotta love your veggies, people!


Open pouch and pour Campbell's Thai Green Curry Skillet Sauce into pan.


Added some fresh basil from my garden, for a great fresh flavor. Yum.

Stir and reduce heat to low, bring to a simmer, cook about 2 minutes or until ingredients are hot.  



McKinney Mommas' Thai Green Curry Tofu w/ Basil

We served our Thai Green Curry Tofu with Basil made with Campbell's Skillet Sauces over white rice and sprinkled with some black sesame seeds on top.

I can't believe how easy this was to whip together, and a great change up from all the same flavors we usually cook with! 

Tasting Notes: 
  • Honestly, we were both surprised that Campbell's came through with a pretty authentic green curry flavor. We both really liked the taste of the Thai Green Curry sauce, and it had a fantastic spicy kick to it! 
  • CAUTION: Probably too spicy for most children. Not for the faint of heart - but that's what's great about curry!

  • The sauce was a bit on the sweet side for our liking.  If it's any consolation, our household typically lowers any sugar content in recipes as we just don't like things very sweet. So, in general others may not agree. 

After this positive experience in the kitchen, cooking with Campbell's Skillet Sauces I can't wait to try the Marsala with Mushrooms & Garlic!

A Double Stroller That Works - Joovy Caboose Ultralight Stand-On Tandem Stroller [Review]

And a baby makes two!

Two babies that is, in two years means this McKinney Momma is going to need some extra special baby gear to make it through the first year with my sanity still intact.

While doing some research on double strollers, I came across an American, family-run stroller company based locally in Dallas, Texas - Joovy.

 

They had a number of options for double strollers, in particular I was looking for a tandem stroller, since I just feel like these are more maneuverable than the side-by-side versions.

The Caboose Ultralight Stand-On Tandem Stroller, caught my eye because of it's modern styling.  Honestly, I had been reluctant to shop for a stroller previously because many of the designs I've seen lately are too "foofy" for me.  Even though I have two girls, I'm not into the heart or flower prints.

The lovely folks at Joovy gave me a chance to give the Caboose Ultralight a test run! 


Here's what I found:


Lightweight - only 21 lbs!

The Caboose Ultralight Stroller's built in seats are made for infants 6 months and up, and since Baby O. is only 4 months, we installed the universal car seat adapter.  It clicks in easily into the spot that a child's tray for snacks and sippy cups will go when she's older. 

The Joovy website has a list of over 25 car seat brands and models that are compatible with this stroller. Our Chicco Keyfit 30 works great in the space, and straps in just fine with the attached strap.

Now, the back seat of this stroller initially comes as a basic bench seat, so your child, 2 1/2 years or older can choose to ride on the bench seat, stand on the platform or walk beside you. Great for independent kids!

However, since "Big Sister H." is only 21 months, and would likely "jump ship" if she had the choice there is an option to purchase the Caboose Too Rear Seat for her to ride in until she's a bit older. Complete with a 5-point harness, the Caboose Too Rear Seat fits children from 6 months to 45 pounds.

I was able to install the Caboose Too Rear Seat easily, with a few folds, snaps and loops.  Once installed, there is a tension strap on the back that can adjust the back seat to recline or sit up straight if your bambinos get tired.

Did I mention I was also able to build the stroller myself, since my hubby was out of town? The directions were simple to follow and I was pretty proud of my accomplishment when I was done!

The storage basket underneath the stroller has space for a blanket, and a few toys or books, plus mesh pockets on each side.  With "Big Sister H's" feet hanging down into the basket, there isn't much room left for swag, but we'll cope until "Baby O" moves out of the car seat adapter and into her own seat - which will make for more open space.




Parent Organizer - aka. cup holder & cellphone or keys compartment

The Joovy Parent Organizer at the top of the stroller handle has a nice zippered pouch where I like to keep my cell phone.  There are two pockets for drinks or sippy cups
made out of machine washable neoprene.

I'm happy about the machine washable part, because my drink, filled to the brim spilled on our first outing. Oops.


Using the car seat adapter and Caboose Too Rear Seat

One option I fell in love with is the oversized sun shade that comes standard on the Joovy Caboose Ultralight Stand-On Tandem Stroller. This sun visor, can be adjusted back and forth to shade one baby or both, depending on the direction of the sun or glare. Fantastic!

Compared to other strollers, this sun shade is the King.....or Queen of shades in my book!

As you can see in the photo above, when using the car seat adapter for a newborn, the front seat has to be reclined which doesn't leave a lot of room for Big Sister or Big Brother in the back. 

It's not a deal breaker, but I imagine this stroller will feel better for both of my kiddos when Baby O. moves to the front seat without the car seat at 6 months, or when she's sitting independently.


Ultra compact design for a double stroller

Whatever the Joovy Caboose Ultralight Stand-On Tandem Stroller lacks for in size, it makes up in maneuverability. This 21 pound stroller is totally manageable for me to use with both of the kids, even when I don't have the hubby around to lift it into the trunk. 

Did I mention I drive a small Honda Civic?  The stroller fits in the car trunk, and yes I can lift it in there all by myself, ladies! 

I've gone up and over curbs easily, all the while packing a bunch of junk in the bottom storage compartment. So for being lightweight, this stroller seems to be holding it's own just fine!

Bertolli Classic Risotto, Dinner In Under 15 Minutes! [Giveaway & Review]

When's the last time you could say you got dinner on the table in less than 15 minutes?

Okay, maybe a peanut butter and jelly sandwich you could serve that quick.

But how about a Classic Risotto?



Behold, Bertolli Classic Risottos!

If you read McKinney Mommas often, you'll know that I actually like to cook from scratch a lot. However, there are nights that with my baby and toddler....a full meal cooked from scratch is simply not an option!

I recently received two of Bertolli's NEW Classic Risottos to try out on those nights that I need a bit of help getting dinner on the table. 


Bertolli Roasted Chicken Risotto

This is complicated, so follow along closely!




Step 1: 
  •  Open bag
Step 2:
  • Pour bag into skillet and cover



Step 3:
  • Cook for 12 minutes, stir occasionally


 Step 4:
  • Spoon into a bowl or plate and serve!
  
It's really that easy.  My toddler could make this meal....if we hadn't already taught her to stay away from the hot stove!

This Roasted Chicken Risotto was creamy and delicious, with a rich and silky parmesan cream sauce covering the asparagus, portabello mushrooms and zucchini.  I love meals that incorporate a veggie, starch and protein, and this one has it all!

Even my hubby, who I like to say has a "snobby palate" liked this delicious risotto paired with a glass of crisp white wine and crusty bread!

Next, Bertolli Garlic Shrimp Risotto


Have I convinced you that making these Bertolli Classic Risottos is easy as pie?

Or, do I have to show you the steps again?

Look at the beautiful colors of those flash frozen vegetables!

Step 1:
  • Open bag (please use scissors instead of your teeth) heh. heh.
Step 2:
  • Pour contents into pan (non-stick skillet)


Step 3:
  • Cover and cook for 12 minutes on medium high heat 
  
Can't you just taste that garlicky shrimp?

 Step 4:
  • Spoon into two dishes or bowls.
  • Enjoy
  • Relax
  • Unwind
  • Don't worry about dishes because there's only (1) pan!
Again, this Garlic Shrimp Risotto is chock full of veggies, which I like. If I'm going to indulge in a decedant and rich risotto dish, I want some vitamin packed veggetables in there as well.

Zucchini, yellow squash and red bell peppers make this dish a delight to the eyes as well as the tastebuds!

Just a few notes:  
  • The Bertolli Classic Risottos are meant to feed two.  It really only feeds two, so be sure to have some bread or a salad if you want your honey and you to be filled up.
  • Directions say to cook for 12 minutes, but my hot stove seemed to get the job done in only 9-10. So, be sure to check and take the pan off when all the ingredients are hot or cooked to 165 degrees.  
  • Bertolli Classic Risottos can be found in the freezer aisle at your grocery store.

Making My Bare Walls Beautiful with Urban Walls [Review]

I've been in this house for a little over a year now, and I'm ashamed to say my master bedroom is still only half finished.

I've unpacked the boxes (most of them) and hung a few mirrors and pictures (on one wall).

My walls need help.




Urban Walls is a company that specializes in wall decals.

I've never used wall decals in my home before, but have seen them online before and in stores and figured they were a great way to add design and style to your home without having to paint or commit to a completely permanent design.

It was hard for me to decide on a design, as there were so many that I thought would look great in our bedroom. 

At first I wanted a tree design, then I thought some birds in flight would be serene and calming.



I ended up choosing a monogrammed design, since it's in our master bedroom and I felt like something personalized.

My peanut wants to be wherever the action is

What a boring wall, huh?  I hadn't hung anything previously, because I'm always afraid of something falling on our head while we're sleeping. Is that strange?

Well, a wall decal can't fall on my head...or if it did, at least it wouldn't hurt!

Now, with a simple wall decal from Urban Walls, my bedroom feels lived in. It feels like it's mine, and I like that feeling!

I have to be honest, the application process wasn't quite as easy as I had assumed.  It was completely do-able but you do have to use a level and tape to make sure you have it up straight.

I also had a little trouble with the decal sticking to the paper and having to wrestle with it a bit to get it to peel off without tearing. I ended up enlisting my husband to help with the process because I couldn't get it done myself.
